OUR JOURNEY

A Kitchen Far From Home

I am a mechanical engineer, and my wife, Gayatri, is an architect. Precision, structure, and design are natural to us – in the way we think and in the way we work.

But beyond our professions, we are food lovers.

Cooking was never just routine in our home. It was ritual. It was experimentation. It was comfort. My mother has always been deeply passionate about food – thoughtful about ingredients, careful with preparation. That influence shaped us long before TAC existed.

I lived in the United States for twelve years. Like many Indians abroad, we built a life – careers, friendships, routines. Eventually, we built our family. In 2023, during Gayatri’s pregnancy, we began looking more closely at what we cooked with every day. She introduced avocado oil into our kitchen. What began as a mindful choice slowly became our default.

Sabzis. Dals. Paneer. Stir-fries. Weekend experiments.

Not because it changed the flavor of home food – but because of how it felt.

Meals felt lighter. Stable. Clean.

And one question stayed with us:

Why do we talk about using less oil – but rarely about choosing better oil?

OUR PHILOSOPHY

Indian Cooking Deserves Context

Oil is not decorative in our kitchens. It is foundational.

And foundational ingredients deserve intention.

Perhaps this is where our professional instincts returned. As an engineer, I am wired to ask how something works. As an architect, Gayatri thinks in terms of structure and integrity. We approached oil the same way – not emotionally, but structurally.

Curiosity became commitment.

THE TRANSITION

When Curiosity Became Research

We studied fatty acid profiles, oxidation, peroxide values, heat stability, and global quality benchmarks. We read extensively – including research from experts like Dr. Selina Wang at UC Davis, whose published findings on avocado oil authenticity were eye-opening.

Learning that quality inconsistencies were widespread in the global market forced us to rethink assumptions.

We realized that processing methods matter. Standards matter. Testing matters.

Labels do not always tell the full story.

And we understood something simple:

If we use oil daily - sometimes three times a day - it should not be chosen casually.

THE LEGACY

Coming Home

Each visit back to India sharpened that realization. Avocados were expensive. High-quality avocado oil was rare. Transparency around sourcing was limited.

We wanted our child rooted here. We wanted to build something meaningful here.

So we planted trees. In our hometown of Vinchur, near Nashik, we began avocado farming – studying varieties, rootstocks, soil compatibility, and climate resilience.

The first sixty days after planting taught us patience. Summers tested resilience. Winters tested planning. Throughout it all, our family stood with us. My mother’s belief in real food and my father’s unwavering support—gave TAC its foundation long before there was a product.

This was never a solo pursuit. It was a family conviction.

And this journey is still unfolding.

Because this was never about chasing a trend.
It was about building something that lasts.

OUR PROMISE

Defining Our Standard

When we began searching for naturally refined avocado oil suitable for high-heat Indian cooking – without chemical solvent extraction – we struggled to find samples that met our expectations.

We do not yet produce our own oil. Instead, we collaborate with carefully selected co-manufacturers who align with our standards. It took over eight months of testing and multiple rejected samples before we found oil that met our qualification framework.

So we built that framework ourselves.

TAC standards are aligned with global benchmarks, independently verified, and built around purity and heat stability.

And foundational ingredients deserve intention.
